Im about to purchase 2 Einsteins, Cyber Commander & 2 CSXCV.

I have a Sekonic 758 light meter and would like to meter the lights with it. I was thinking of getting a CSRB and connecting via sync port on the meter. I assume the trigger has a 3.5mm jack.

Would this work?

I also assume that the CST would work but am opting for the additional relay functionality of the CSRB.

No, the CSRB does not have a sync input, only output. This will work with the CST. You can, however, put the meter in cordless mode and use the test button on the CSRB in repeater mode to trigger the lights.
