I've had the LG4X kit gathering dust for a while. While it would happily run on my Ultra1800, I would love to make it work with my Zap 1000s.

I haven't opened the Zap yet. Is there any reason why it would not be possible for me to relatively easily add a remote control port to them?

Not possible. There is no infrastructure for the RJ11 connection on the internals of the ZAP1000.
