I am having issues with the pocket wizard setup defaulting to the model light activating even if I turn it off it changes the setting. It works fine if I just use the sync cord, is there a setting I am missing on my Mini TT or TT5 I should set so that it doesn't alter my settings on the Einstein automatically?

Einstein, when using the multi pin reciever conection, will have its settings overridden by the transmitting device. This applies to CyberSync and PocketWizard, so there would be a setting in the transmitter that controls the model lamp, and it is apparently on. We do not have the most familiarity with the transmitting devices from PocketWizard, so the best source of technical assistance would be through contacting them.
