Anyone have a good idea or system for focusing Einsteins for using cookie patterns for backgrounds? I want to use the Einsteins with Chimera window patterns.

look up Fresnel Stage Lighting.
Some like the Zoom Acclaim can be hacked to put a PCB/Balcar mount on the back instead the hot light for stages. They're around $400 IIRC.

You really wanted the zooming feature to focus properly and makes the edges sharp...

I have no idea how well this works, but they sell an adapter for our lights:
