I have had great success with PLMs, SBs and the E640's shooting against a white background. The background goes somewhat grey but that hasn't been a problem. Now I will need the background to be white so I thought about cross lighting it from either side.

I have 1 spare B800 so I will need to get another strobe. Here is the question - should I get another B800 or does it make more sense to get another Einstein?

A B800 would suffice, thought an Einstein can do anything a B800 can do, but the inverse is not true. Should you have other configurations, the Einstein may prove to be more useful (or as a back up to the current Einstein).

So if I go with an Einstein would you recommend an 8.5HOR or the 7AB/R to match up with the other B800?

I would use the same reflector on each light. For the purposes of evenly lighting a backdrop, The 70 degree 7" reflector is a good choice. I often do event photos with a 9' white back ground, and we use two lights with barndoors (only to flag light coming back to the subject and camera) with pretty good results. We have limited floor space, which forces us to use the barn doors. It would not always be necessary to use them.
