I'll shortly be placing my order for a Zeus 2500pack. If I use one of my dynalite SH-2000 heads will I be getting the full 2500 ws? Or just 2000?

You will get the full 2500Ws, since the head really does not have a way to limit the power. However, by putting 2500Ws into a head nominally rated at 2000Ws, you will probably see a reduced life from the flash tube.
