What changes occur when using / not using the inner baffle in the large softbox. I would imagine the light gets eaten up but other than that is the pattern or light quality any different? If so, how?

The inner baffle diffuses the light before it reaches the front of the soft box so you get more even light across the face. Without the baffle, the light can be hotter in the center than at the edges. In some of Joey L's videos (from a few years ago now) he mentions that he purposely does not use the internal baffle so that he can take advantage of the hotspot.
